I’ve you’ve never been to Utah, and do something other than go canyoneering, you should probably do this:
Make sure you’re a solid technical rider, or you will loose teeth. Seeing this video (not mine) brought back good memories of an extended trip, climbing up from town to do that descent, back in 2007.
I loved that, thanks for sharing it :) It is fabulous scenery and that looks like an exciting way to enjoy it. Sadly, watching the video is the closest I shall ever get, being disabled, but it is good to enjoy something even at such a distance. Now I’m going to watch the other ones!
I’m satisfied to stick with canyoneering. I only got a tiny taste of it last time. Looks intense, though.

In 5 trips to Moab, I have always ignored the La Salle Mtns. Too much to do in Moab, between rock climbing, canyoneering, mountain biking, etc.
