B&P cooking: Roast Italian Hen

Slice onions, press garlic, sautee with evoo and a bit of sugar.


Soak hens in sea salt brine.


Mix onions with ricotta, wine, marinara. Prep glaze: evoo, wine, salt, pepper, oregano, etc.

Drain hens. Stuff. Glaze.


Bake in the clay roaster for ~100 minutes at ~380.


Eat, with Scuffins TM.


Chocolate-oatmeal-walnut Scuffins. The Joy of Cooking scone recipe, no milk, two eggs, some water. 400 for ~12. In the ultra-special muffin pan.

Yummmmmmmmmmm.

In regularly scheduled programing, we didn’t do much today. I hit PiYo this morning, which made some tired and creaky legs feel much better. M did not, choosing to continue her exacting Trans-Iowa prep and stay in bed. Then, besides changing the oil and transmission fluid (and finding that there is in fact such a thing as too much blue locktite on the skid plate bolts), I did very little. Blessed rest.

But I will say that America’s Funniest Home Videos is just as awesome as it was 15 years ago. Not having cable is a cultural experience.
