Saturday Soup

Good food for cold weather:

Warm ~1 quart chicken or veggie stock. Add,

1/8 cup ginger roughly chopped
6-10 cloves garlic roughly chopped
1 block extra firm tofu cut into 1/2″ cubes
1/3 habenero pepper, diced well
3/4 cup jasmine rice
2 Tbs sesame oil
1 Tbs sea salt

Simmer covered for a good hour. Add,

1 medium sized sweet onion, cut into long and thin strips
1 bell pepper, long and thin strips, color of your preference

Stir and simmer until veggies are done to your taste, anywhere from 5-25 minutes.

Leafy veggies like spinach and cilantro are best added right before serving, cook them just long enough to wilt thoroughly.
