B&P cooking: Roast Italian Hen
Slice onions, press garlic, sautee with evoo and a bit of sugar. Soak hens in sea salt brine. Mix onions with ricotta, wine, marinara. Prep glaze: evoo, wine, salt, pepper, oregano, etc. Drain hens. This weekend goes to 11
Saturday: 10 laps, 10th duo. 62.5 miles, 8500′ of climbing, all singletrack.I did laps 2,4,7,8 and 10. We had a helluva lota fun.
