M and I are off the Yellowstone this evening, picnic dinner for skiing tomorrow in tow. Mashed potatoes, mashed yams, duck, cranberry sauce, cookies, pumpkin seeds, etc.
M stole the duck photos, but tried Youtube rather than Vimeo, and ran out of time before she had to go to work. So I win:
Clean the duck, zest and smash a few oranges. Stuff the oranges and some bacon in the duck. Sprinkle zest on top, lay on the bacon. Roast at ~250 for 3-4 hours, then on 500 for an hour. Eat.
A duck doesn’t produce much meat, but damn is it good. Not low fat, either.
After the carcass has been picked clean, cut it up and boil it to make soup stock!
I got in a killer, killer ride in the Rattlesnake this afternoon. I recall riding Granite Basin on Thanksgiving day last year, and it was only a bit warmer than it was out today. Weird how not mountainous the weather’s been lately.
