Bonus recipe from late last night:
Jalapeno-Avocado Aioli
-Crack two eggs into the food processor. Add 2-3 roughly chopped fresh jalapenos and half of one ripe Avo.
-Process the hell out of it.
-Add a splash of beer and a good bit of coarse sea salt.
-Process again.
-Continue processing whilst drizzling (emulsifying, really) oil of some sort (canola, olive) into the mixture. Stop when desired texture has been reached.
Enjoy as a tasty dressing or dip. Fear not the salmonella (or whatever you supposedly get from raw eggs, the peppers kill it anyway). You can blend half a can of vegetarian refried black beans into the above to make a tasty bean dip, too.
And it’s low fat! Ha!
